When I needed to lose a few pounds after I had my first baby I had a common challenge. I had to learn to cook dinner with less calories but tons of flavor. I had a family that wasn’t going on a diet, so they wanted the usual fare full flavor. This chicken breast recipe became a family favorite they ask for!
At your local grocer you can pick up bags of frozen chicken breasts that make this recipe quick and easy.
Preparation time: 5 minutes
Bake time: 30 minutes
4 chicken breasts 1/4 cup dijon mustard 1 tsp. vegetable oil
1/4 cup white wine 1 Tbls. mustard seed
If you’re using the frozen type of chicken breasts, take them out to defrost.
Set your oven to 400 degrees.
In a bowl combine dijon mustard, vegetable oil, white wine and pepper.
Spray a casserole dish with Pam and lay the fresh or defrosted chicken breasts in it.
Pour the dijon mix you just made over the breasts.
Sprinkle with mustard seed. Bake for 30 minutes.
Serve with a fresh salad!
