Zucchini is one of my favorite vegetables! I love discovering new recipes that use Zucchini.
Preparation time: 35-40 minutes
Bake time: 30 minutes @ 350F
1 lb. hamburger, browned and drained 1/2 small yellow onion, diced 2 cloves minced garlic
1-6 oz. can tomato sauce 1 tsp. Worcestershire Sauce 1 tsp. salt
1/2 tsp. Italian dressing 1/2 tsp. pepper 4 zucchini, sliced in half lengthwise
1 egg, beaten 1 cup Ricotta Cheese 1 cup grated Parmesan Cheese 1/3 cup parsley, chopped
Cut zucchini lengthwise. Remove most of the pulp from inside. Place the shell to the side and the pulp it in a large skillet or wok along with the browned hamburger, onion, minced garlic, tomato sauce, Worcestershire, salt, Italian seasoning and pepper.
Over medium heat, simmer for about 40 minutes.
While the meat mixture is simmering prepare the zucchini. Place zucchini in a casserole dish with a little water and cover. Place in either a microwave oven and process until just tender, or place in oven and bake until just tender. When the zucchini is tender remove from the casserole dish, pour out any remaining water in the casserole dish and replace the zucchini in it.
In a bowl mix the egg, Ricotta Cheese, Parmesan cheese and parsley.
Now back to your simmering meat mixture. Stuff each zucchini shell you just tendered with meat mixture, Spoon the egg and cheese mixture on top.
Bake for 30 minutes.
