Chicken & Rice (Or noodle) Soup
Preparation time: 15 minutes of slicing veges
Bake time: 2 hours
1 whole chicken 2 cups diced celery including leafy tops 1 cup sliced carrots
3 cloves garlic, minced ½ cup yellow onion, sliced thin 2 cans vege all mixed veges
4 tsp. Chicken bouillion ½ tsp. Pepper ½ tsp. Poultry seasoning
⅓ cup uncooked rice or 1 ½ cups flat noodles Okra *optional
In a large pot add first set of ingredients. Cover and bring to a boil, then lower the heat and simmer for about 2 hours. Remove chicken from broth and separate out the bones and discard.
Cut chicken into bite sized pieces and put back into the pot. Add rest of ingredients and continue to cook about another hour.
