Corn Couscous

1 ½ cups water            1 – 16 oz can black beans, drained & rinsed            1 – 8 oz. Can whole kernel corn, drained

1 Tbs dry vegetable soup mix           1 cup uncooked couscous               1/3 cup freshly grated Parmesan cheese


In a large saucepan combine all of the ingredients except couscous and cheese.

Cook over high heat until mixture comes to a full boil.

Stir in couscous. Cover and let stand 5 minutes.

Sprinkle Parmesan cheese on top.

Fluff with fork before serving.
