Creamy Pearl Onions
My family enjoys peas so I will often add a can of peas to this recipe at the very end.
Preparation time: 30 minutes
Bake time: No baking
2 lbs. Pearl onions (Or a package of prepared frozen pearl onions) 1 tsp salt
5 whole cloves 2 Tbls butter 3 Tbls flour 2 cups hot milk
4 Tbls dry sherry ¼ tsp ground pepper parsley, chopped 1 can peas *(Optional)
If using the frozen pearl onions go straight to this * step. Otherwise, start here…Fill a pot with water and bring it to a boil. Add the pearl onions and bring back to boil and allow to boil 3 – 4 minutes. Remove from heat and immediately douse in cold water. Trim and remove skins on the pearl onions.
Put the onions back into the pot and add enough water to just cover them. Add salt and cloves. Bring to a boil, reduce heat and simmer for 15 minutes.
Drain the onions and discard the cloves. Set aside.
*Melt butter in a saucepan over medium heat. Add the flour, using a whisk to mix it in well.
Add the hot milk stirring constantly until smooth.
Add cream, sherry, salt and pepper, mix well with whisk.
Combine the prepared onions with the sauce, add a can of peas * (optional) and sprinkle with the parsley.
