Easy Custard Pie
Second only to Pecan Pie for me!
Preparation time: 10 minutes plus 8 for pie crust.
Bake time: 25 minutes
1 single crust pie shell.
4 eggs, lightly beaten 1/2 cup sugar 1 tsp. vanilla 1/4 tsp salt
2 1/2 cups milk 1/4 tsp ground nutmeg
Prepare pie crust in a 9″ pie pan. Line the edge of the pastry with foil to prevent burning. Bake (empty) for 8 minutes at 450 degrees until dry.
Pour eggs into a medium sized mixing bowl. Add sugar, vanilla and salt, mix. Pour in milk while mixing at the same time until well blended.
Place the pre-baked pastry onto the center rack of the oven and pour filling in. Turn oven temp down from 450 degrees to 350 degrees. Keep foil on edge of pie crust (You may need a fresh piece of foil).
Bake for 25 minutes. Remove foil and bake for another 15 minute. Pie is done when a knife inserted into the center comes out clean.
Cool on wire rack.
