Nothing Could Be Easier To Prepare Than These Roasted Red Potatoes
Preparation time: 15 minutes
Bake time: 20 minutes @ 375 F
2 lbs. red potatoes 1/4 cup extra virgin olive oil 4 garlic cloves 2 tsp, crushed dried thyme
Fresh ground pepper salt parsley
Bring a pot of water to a boil. Sprinkle a dash of salt into the water. Cut the potatoes in half and add to the boiling water. Lower heat and simmer for about 5 minutes. Drain.
Place the potatoes in a baking dish in one layer. Pour the olive oil over the potatoes and stir making sure to flip the potatoes several times to coat with the oil. Cut the garlic cloves in half and arrange on top of the potatoes.
Sprinkle thyme, salt and pepper over the top. Bake for 20 minutes, stirring and turning potatoes every five minutes.
Serve warm, sprinkled with parsley if you like.
