Eggnog Cheesecake

Here’s a twist on an old favorite!  This is a deliciously easy, no-bake, recipe!


Preparation time:  45 minutes (chill overnight)

Bake time:  None


1 1/4 finely crushed vanilla wafers                        3 Tbls. butter                         1 env. unflavored gelatin 4 beaten egg yolks     2 – 8 oz. packages cream cheese, softened               4 egg whites

1/2 cup whipping cream                    1/3 cup sugar                          1 cup dairy eggnog

1/4 tsp. ground nutmeg                   2 Tblsp. rum                            1/2 cup sugar

Optional:  Shaved chocolate  or crushed vanilla wafers


Ina small bowl combine vanilla wafers and melted butter.  Mix well.

Press crumb mixture into bottom of 9 inch round pan (spring form pan works well).  Work the mixture up the sides of the pan about a 1/2 inch.

Chill one hour or until firm.

In a medium saucepan, over medium heat, combine 1/3 cup of sugar and gelatin.  Stir in eggnog, egg yolks and nutmeg.  Stirring constantly bring to a boil then remove from the heat.

In a large bowl beat cream cheese with electric beaters for 30 seconds until softened.  Beat in previous mixture of gelatin.  Stir in rum.

Chill until partially set.

In a medium bowl beat egg whites until soft peaks forms.  Add remaining 1/2 cup sugar beating again until soft peaks form.

Now, in a smaller bowl, beat cream until soft peaks form.

Fold egg whites mixture and whipped cream into gelatin mixture.  Turn into pan lined with crumb mixture.  Cover and chill until firm (overnight).

Sprinkle with shaved chocolate or vanilla wafers.  Serve!
