Golden Sweet Cornbread
The best cornbread I’ve ever made!
1/4 cup bacon grease 1 1/2 cups cornmeal 3/4 cups flour
1 1/2 tsp. salt 3 tsp. baking powder 4 Tbls sugar
2 cups milk 2 eggs
Make sure you preheat the oven to 425 degrees beforehand.
In a skillet melt bacon grease. Run the melted grease all around the skillet coating all surfaces.
With a wire whisk combine cornmeal, flour, salt, baking soda, sugar, milk and eggs. Mix well, but gently.
Any excess bacon grease, from the skillet, can be poured and mixed into the batter.
Pour the batter into the greased skillet. Place the skillet into the preheated oven. Bake for 40 minutes. It is done when there is a golden brown top and it starts pulling away from the sides of the skillet.
Use a tea towel over cornbread to keep warm while serving.
