Good Ol’ Sweet Potato Pie
If I had to choose between this sweet potato pie and pumpkin pie, well, I don’t know. Let me have another slice and I’ll let you know!
Preparation time: 1 hour (depending on whether you have cooked sweet potatoes on hand. 2 hours if not.)
Bake time: 1 hour
3 sweet potatoes (good size ones) 1/2 cup sugar 1/2 tsp ground cinnamon
1/4 tsp. nutmeg 1/4 tsp. allspice 1/8 tsp. salt
3 eggs 1 cup sour cream

Preparation: When I bake something in the oven I will throw in a couple sweet potatoes with it for the sweet potato pie.
If you don’t have any cooked sweet potatoes you can buy a can at the store or make your own by washing and then baking three sweet potatoes at 400 degrees for about an hour or until tender.
Bake the pie crust according to directions for an empty shell. About 400 degrees for 10 minutes.
Remove the sweet potato from its skin and put in a bowl. Either stir by hand or use electric beaters and beat until smooth (unless you like lumpy than beat just until almost smooth).
Add eggs and the sour cream and beat well.
Pour into prepared pie crust. Bake at 375 degrees for approximately 1 hour. Use a wooden toothpick poked into the center of the pie to see if it is done. Toothpick should come out clean.
Serve with whipped cream or ice cream when it is still warm!
