Preparation time: 3 1/2 hrs.
Bake time: 25 minutes
2 packages active dry yeast 1/2 cup warm water
6 Tbls honey 1/4 cup shortening 1 Tbls salt
1 3/4 cup warm water 3 1/2 cups whole wheat bread flour 7 Tbls wheat germ
3 to 4 cups white bread flour
Dissolve the yeast in the 1/2 cup of warm water.
In a large bowl add honey, shortening, salt, warm water and wheat germ. Stir in dissolved yeast. Add whole wheat bread flour. Mix until smooth.
Add enough white bread flour to make the dough easy to handle. Place on a lightly floured breadboard or flat surface and knead for ten minutes. Spray a bowl with Pam. Place dough in bowl, turn once to coat with the Pam. Cover with a tea towel. Set in a warm spot to rise for 1 1/2 hrs. Punch down and let rise another 1 hr.
Divide into 2 parts. Let rest ten minutes. Shape into loaves by rolling out dough to 1″ thick and then rolling it up like a jelly roll and sealing the sides well.. Place in greased loaf pans and let rise for 45 minutes.
Place loaves in preheated 425F oven and bake for about 25 minutes, or until loaves sound hollow when thumped.
Butter the tops of the loaves and allow to cool before serving.
