Meatball & Hominy Soup
This is a delicious, tasty soup, served with warm corn tortilla’s and sliced line!
Preparation time: 15 -20 mins.
Bake time: 1 hr (simmering)
1st Set of Ingredients:
1 1/2 lbs hamburger 2 eggs 6 Tbls. chopped cilantro
1 tsp. garlic powder 4 tsp. whole cumin (crushed lightly) 3 tsp worstershire sauce
1 tsp. salt 1 tsp. fresh found pepper 1 clove garlic minced
3 tsp. oregano
2nd Set of Ingredients:
3 cans chicken broth 2 tsp. cumin (crushed lightly) 3 Tbls cilantro
1 sliced med. onion 2 carrots cleaned and sliced 2 stalks celery, peeled and stalked
1 can golden hominy, drained 1 can white hominy, drained 1 bunch scallions, chopped
1 to 2 tsp. salt 1/2 tsp. fresh ground pepper 1 Tbls. oregano
1/3 cup chopped parsley 2 pkgs corn tortillas 2 limes, sliced
In a large bowl add all of the ingredients in the 1st set of ingredients except the hamburger. Mix well.
Take the hamburger 1 Tbls at a time and make small meat balls by rolling between your hands. Set aside.
In a 2 to 3 quart sauce pan add water to about half full. Bring to a boil and add some of your meatballs. Let simmer for about 4-5 minutes. Remove to a platter as you cook them. Strain and reserve the liquid.
In a very large pot add the 2nd set of ingredients, except tortillas and limes. Let simmer for about 30 minutes then add the reserved liquid from meatballs and the remaining meatballs. Continue to simmer for about 1 hour.
Warm the tortillas and serve with sliced lime and bowl of Meatball Hominy Soup!
