Old Fashioned Minestroni Soup
This good old fashioned Minestroni is a perfect way to warm up the house on cold winter days! Start the soup first thing in the morning and enjoy in
front of the fire that evening.
Preparation time: 7.5 hrs.
Bake time: 7 hrs. (simmering)
3 quarts water 2 lbs. soup bones (ask butcher to crack them) 1 lb. salt pork, diced
1 cup soup mix (contains lentils, peas, barley and pastas) 1 cup potatoes, diced 1/2 cup carrots, diced
1/2 cup celery, diced 1 cup dried bean mixture 1/4 head cabbage, shredded
1 yellow onion, sliced thin 1 leak, shredded 3 Tbls. parsley
3 cloves garlic, minced 1/2 tsp. each – basil, oregano & Italian seasoning 1/2 tsp. salt
1/4 tsp pepper 2 cups beef broth (make strong) 1/2 can tomato paste
1 loaf sourdough bread
Add water to a large pot. Add soup bones, salt pork, onions and garlic. Bring to a boil. Simmer for about 4 hours.
Remove bones and fatty pieces and skim fat off the top.
Add dried beans and seasonings except the salt. Simmer another 2 hours until beans are tender.
Add beef broth, vegetables, beef broth, salt and tomato paste. Simmer 1 hr stirring occasionally.
Serve with sourdough bread!
