One of my all time favorites!
Preparation time: 15 minutes
Bake time: 25 minutes (Give or take a few minutes)
1 pastry crust 3 slightly beaten eggs 1 cup corn syrup 2/3 cup sugar
1/3 cup margarine, or butter, melted 1 tsp vanilla 1 1/4 cups pecan halves
Prepare pastry crust in a 9″ pie plate.
Filling: Combine eggs, corn syrup, sugar, margarine (or butter) and vanilla. Mix well.
Stir in pecan halves.
Set the pie crust, in its pie pan, into the oven on a rack. Carefully pour the the filling into the pie crust.
Take a section of foil and wrap it around the edge of the pie crust to prevent burning.
Bake @ 350 degrees for 25 minutes. When a knife is inserted into the center of the pie and comes out clean, the pie is done.
Remove from oven and cool on a rack.
