Delicious, Delicate, Pinwheel Cookie Recipe
11-12 minutes @ 400F
2 ¼ cups dates, chopped 1 cup sugar 1 cup water
1 cup chopped walnuts 1 cup shortening 2 cups brown sugar
3 eggs, beaten 4 cups flour ½ tsp salt ½ tsp baking powder
Place dates in a saucepan. On medium high heat gradually add sugar and water and cook until thick. Add nuts. Remove from heat and allow to cool.
Cream shortening and brown sugar. Add eggs and mix well.
Sift together dry ingredients. Add to creamed mixture mixing well.
Roll out on floured board to 1/4” thick. Spread on cooked date mixture and roll up. Wrap waxed paper around roll and chill.
Cut with sharp knife into thin slices.
Bake on an ungreased cookie sheet.
