Ritz Chicken Parmesan
Either chicken or turkey can be used in this recipe.
Start this recipe the night before by soaking the chicken fillets in buttermilk.
4 chicken breast fillets 1 1/2 cups Ritz crackers, crushed 1/3 cup Parmesan cheese
1/2 cube butter 1/4 tsp garlic powder 1/8 tsp pepper
1/4 tsp salt
As mentioned above, the night before put the chicken (or turkey) fillets in the buttermilk to soak over night in the refrigerator. Reserve a 1/4 cup of the buttermilk.
In a bowl combine the crushed Ritz crackers and Parmesan cheese.
Preheat your oven to 350 degrees.
Lay each chicken breasts in Ritz mix and place in casserole dish. Sprinkle with garlic powder, pepper and salt. Pour the reserved buttermilk over the chicken fillets. Do the same with the butter.
Cover and bake 1 hour. Uncover and bake another 20 minutes.
Serve over rice! Enjoy!
