Sweet Golden Cornbread
This recipe works best if a cast iron skillet is used. If you have never cooked with a cast iron skillet the video below can be a helpful start.
Preparation time: 15 minutes
Bake time: 40 minutes
1/4 cup bacon grease 1 1/2 cups cornmeal 3/4 cup flour
1 1/2 tsp salt 3 tsp. baking powder 4 Tbls sugar
2 cups milk 2 eggs
Preheat oven to 425 degrees.
In a cast iron skillet melt bacon grease and tilt skillet to coat all sides.
Using a wire whip add all of the above ingredients in a bowl and mix gently. Do not use an electric mixer for this step. Pour excess bacon grease into batter and mix in.
Pour batter into skillet and bake in preheated oven approximately 40 minutes. It is done when it is golden brown and has started to pull away from sides of skillet.
Place a tea towel on top of corn bread to keep warm while serving.
