The Best Pasta Salad
This is my absolute favorite pasta salad. Fresh cherry tomatoes and bite size salami and cheese make this salad versatile as a main dish or accompaniment to a main dish.
Bake time: 0
Preparation time: 35 minutes
3 ½ cups pasta Rotini style, cooked ½ lb salami, cut into ½ ” cubes
½ lb provolone cheese, cut into ½ “ cubes 1 ½ cups cherry tomatoes, halved
¾ cup pitted olives ¾ cup green pepper strips 1- 2 oz jar pimientos
1 cup (8 oz) Italian dressing (I prefer to pour the entire bottle in!)
Cook the Rotini al dante. While the Rotini is cooking chop up the salami, cheese and bell pepper. Half the tomatoes.
In a large serving bowl put all the chopped up ingredients, the olives and pimientos.
Drain the noodles well. Run cold water over the noodles to aid in cooling. Add the noodles to the bowl.
Pour the Italian dressing on top. As I mentioned below, I like Italian dressing so I just pour the whole bottle in!
Toss until ingredients are coated with the Italian dressing.
Serve with bread sticks as a main dish or as a side dish.
