If you have ever grown a crop of zucchini you’ll know the harrows of trying to get rid of it all. Giving it away to neighbors can, after a while, threaten the good neighbor thing. This Zucchini bread is your answer to the Zucchini woes of a gardener and it tastes great too!
Preparation time: 20 minutes
Bake time: 1 1/2 hours
Ingredients (This recipe can be doubled to make 3 loaves):
3 eggs, well beaten 1 cup vegetable oil 2 cups sugar 2 cups grated Zucchini 2 tsp vanilla
3 cups flour 1 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 tsp cinnamon
*1/2 cup chopped nuts
Preheat oven to 325.
In a large mixing bowl, cream together eggs, vegetable oil, sugar, Zucchini and vanilla.
In another bowl mix together flour, baking soda, baking powder, salt, cinnamon and vanilla. Blend well. Then, pour into the egg mixture. Mix well. *Add nuts if you so desire.
Spray two bread pans with Pam and flour. Pour half of the mixture into one pan and the rest into the other pan.
Bake in the oven for 1 hr and 20 minutes.
